The Corn Kernel
Each kernel has a hard, airtight shell. Inside, there is starch and a small amount of water. When heated, that water turns into steam, increasing the internal pressure. The kernel resists until it reaches a critical point: around 180 °C, with a pressure close to nine atmospheres. At that exact moment, the shell breaks and the transformation happens: the popcorn is born.
The Importance of the Right Moment
It cannot happen before, because there is not enough force to break the shell. It cannot happen after, because the kernel burns. Only at that precise instant, neither before nor after, is change possible. The “pop” is the audible proof that the waiting was worth it.
That's what today's system does, it waits patiently for the right moment, and then when it hears POP, it eats the whole bowl of popcorn.
